Turkey and Cranberry Quesadilla's: Promote Sleep and Use Leftovers!

Turkey has long been known to help you feel sleepy, thanks to it containing tryptophan. If you have extra turkey and are looking for a quick dinner to help you feel sleepy tonight, try this quesadilla!
Turkey and Cranberry Quesadillas
Ingredients:
2 cups leftover cooked turkey, shredded or chopped
2 tablespoons cranberry sauce (or more, to taste)
1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
1 tablespoon olive oil (or butter)
4 flour tortillas
1/4 cup chopped green onions (optional)
Salt and pepper, to taste
A pinch of cumin or chili powder (optional, for extra flavor)
Sour cream or guacamole (for serving)
Instructions:
Prepare the filling: In a bowl, mix the shredded turkey with the cranberry sauce. If you want a little extra kick, add a pinch of cumin or chili powder. Season with salt and pepper to taste.
Assemble the quesadilla: Lay out two tortillas. Spread a portion of the turkey mixture evenly over one side of each tortilla. Sprinkle with cheese and top with chopped green onions if using. Place the second tortilla on top, pressing lightly.
Cook the quesadilla: Heat 1 tablespoon of olive oil (or butter) in a large skillet over medium heat. Once hot, place one of the prepared quesadillas in the skillet. Cook for 2-3 minutes on each side until golden brown and crispy, and the cheese is melted inside.
Serve: Once cooked, remove the quesadilla from the pan and let it rest for a minute before slicing into wedges. Serve with sour cream, guacamole, or a simple salad on the side.
Tips:
You can add sautéed onions, bell peppers, or spinach to the filling for more veggies.
If you don't have cranberry sauce, you can substitute it with a spoonful of barbecue sauce or a tangy mustard sauce for a different flavor profile.
